Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 highland beef shanks (you can also take a chuck roast, so delicious)
- 1 onion, chopped
- 2 sliced carrots
- 3 tablespoons of brown sugar and 1/3 cup maple syrup
- 2 cups veal
- 1 small bottle of lager or stout
- 2 teaspoons cornstarch
- 1 bay leaf
- Salt and pepper
Preparation
- Brown shanks in the oil, butter and set aside.
- In the same pan, saute onion and carrots. Add brown sugar. Return the meat to the pan to caramelize with the vegetables for 2 to 3 minutes. Add to the mix, beer and veal and stir to loosen the drippings in the bottom of the pan.
- Cover and cook in oven at 275 degrees for 3.5 hours or until the meat is tender (stirring occasionally). When the shanks and the vegetables are cooked, remove from the pan. Then reduce the cooking liquid and thicken with cornstarch.
